Onion and garlic sautéed in a little coconut oil, followed by tomato chunks, celery, broccoli, red/green peppers, quinoa and a healthy dose of some spicy spices.

Lean chicken breasts, smothered in Cayenne pepper and chilli powder.

Threw a mix of salsa and greek yogurt on top.

Not exactly an authentic enchilada but it’s tasty and matches my diet.
